Pinot Noir

Vineyard: Our Single Vineyard Pinot comes from carefully selected, generally small, family-owned vineyards in Carneros, the Russian River and Sonoma Coast. 

Winemaking: Hand-harvested at night the fruit is hand-sorted and gently de-stemmed (though we may at times keep a portion whole cluster) and moved to 5T open top fermenters. After a 4-5 day cold soak to extract nice color, the wine is inoculated and punched down 3 times daily. Once dry, we drain the free fun and press the rest gently to 100% French oak barrels, 80-90% neutral. In the traditional Burgundian method, the wine is aged sur-lie, with regular stirring.  Malolactic conversion is completed in the barrels during aging. The wine is aged for approximately 11 months in French oak barrels. The wine clarifies naturally, without fining or filtration with a careful racking prior to bottling. The barrels are tasted thru throughout aging and eventually it is decided which barrels will be bottled as Single Vineyard, which are Appellation designate and which may go into our keg program.
